Recipe – EASY Microwave Chocolate Baileys Fudge

Have you ever splashed yourself with hot fudge? It usually results in a few naughty words. In my lifetime, I have made a perfect fudge once….ONCE! I did it properly to the letter with a thermometer and kept it stirring until I thought my arm would drop off. Other than that, I have always had an unsuccessful time making my own fudge. It would either develop burnt bits that floated around and/or it just wouldn’t set.

Here is a recipe that sets for me each time, doesn’t make my arm tired and has the option to be a grown up fudge with Baileys or Tia Maria.

INGREDIENTS

500g Soft Brown Sugar

300g Chocolate

150g Butter

1 Can of Condensed Milk (my can was 397g)

1 Tablespoon of Baileys or Tia Maria

INSTRUCTIONS

Line a tin with baking parchment paper – I used some butter to help it stick to the sides

In a microwavable bowl, pour in your brown sugar, butter and condensed milk

Put in the microwave for 2 mins

Stir

Microwave for 2 mins

Stir

Microwave….for 2 mins

stir

Microwave for another 2 mins

Careful – it’s hot! Stir in your chocolate until it’s melted and the fudge has thickened slightly

Tip in your Baileys – not too much as you want your fudge to set!

Pour into your prepared tin and leave it to cool down completely before placing in the fridge

Once set, cut up into chunks and eat them or give them away in a nice gift bag if you’re feeling nice!

These will store nicely in a sealed container for about 1-2 weeks

  1. Hi Helen,
thank you for sharing this wonderful recipe and of course the nice packaging!
I have never tried making fudge, but now I will try for sure.
Do you think I could also put in other things like nuts, raisins etc. instead of the baileys?
